Shitake Pulled Memphis BBQ Taco with Fresh Mango Salsa

SERVES 4

WHAT YOU'LL NEED

  • Just Add Menphis BBQ Air Fryer Coat’N’Cook
  • 400g shitake mushrooms
  • 1 onion

TO SERVE

  • 4 Taco Shells
  • 1 mango
  • 1 red onion
  • 1 tomato
  • 1 lime
  • Bunch coriander

METHOD

    Take your mushrooms and with the back of 2 forks begin to pull apart your mushrooms.

    Finely dice your onion.

    Mix together the onion, mushroom and mix in the Just Add Memphis BBQ Air Fryer Coat’N.Cook
  • 4
    Place in the Air fryer and cook for 15 mins @ 180.

    In the meantime, start to build your salsa.

    Dice into small chunks, Mango, Red onion, Tomato and mix.
  • 7
    Add in zest and juice from your lime, chopped coriander and season to taste.
  • Take your taco shells and fill with the BBQ Shitake and onion mix. Top with a spoon of the fresh mango salsa. If you want to add a little kick, add a touch of a hot sauce.
